The Glasshouse off the Mile has created a new menu to showcase the perfect selection of dishes for ideal summer dining.
With a move away from warm, rich food for the winter months, the new menu gives diners a varied choice of light, tasty plates to enjoy as the sunshine hopefully hits Edinburgh’s Old Town.
The restaurant – famed as the latest venue for acclaimed Scottish chef Steven Adair – offers contemporary yet affordable Scottish cuisine using the very best locally sourced ingredients.
Its superb location – just off Edinburgh’s Royal Mile in St Giles Street – ensures guests sitting inside or outside will dine in style whilst enjoying delicious cuisine.
The menu starts with a choice which includes Arbroath Smokie mousse, a rich Foie Gras parfait and seared hand dived west coast scallops.
To follow, Steven has put together a selection meals to satisfy every palate – ranging from vegetarian to lamb, and chicken to duck.
The confit of duck leg – accompanied by braised red cabbage, breast of Barbary duck on mash and crispy skin with blood orange jus – will tantalise taste buds with its exquisite flavours and aromas.
And the unique take on the tuna nicoise means the fish is served rare, drizzled with a light chilli and sesame oil.
The desserts have also been updated to summer status with a glazed lemon tart with lime and ginger sorbet as well as The Glasshouse trio of Brulees which are served with a coconut biscuit.
Steven, who also ran the award-winning The Glasshouse at Eskmills in Musselburgh for three years, said:
“We’ve come up with a menu which uses the freshest local, seasonal ingredients which ensures they are in their prime for taste.
“The choices are suitable for summer dining in that they are light but still very fulfilling and will be a great change to the traditional dishes most common at this time of year.”
