DURING the glittering annual AA Awards Ceremony at the Hilton Park Lane Hotel in London on 24th September 2012, Cringletie House Hotel & Sutherland Restaurant – with head chef, Patrick Bardoulet, and general manager, Vivienne Bardoulet – was awarded its third AA rosette.
Said the AA of the hotel and restaurant: “Outstanding restaurants that achieve standards that demand recognition well beyond their local area. The cooking is underpinned by the selection and sympathetic treatment of the highest quality ingredients. Timing, seasoning and the judgment of flavour combinations will consistently be excellent. These virtues tend to be supported by other elements, such as intuitive service and a well-chosen wine list.”
Around ten per cent of the restaurants/hotels win the AA Restaurant Guide have Three Rosettes and above.
Patrick began his culinary career North of Paris at Le Chateau Montvillargenne, a former residence of Baroness Jeanne de Rothschild and now partner of the Rothschild Group. He then gained experience at the Pavilion St Herbert, north of Chantilly, before leaving his native homeland at the age of 26 to further his growing culinary expertise throughout Europe. He went to Les Freres Jacques in Dublin, a French restaurant specialising in seafood , some two AA Rosette restaurants and the three AA rosette Alexander House.
The Lake District was Patrick’s next destination working as a sous chef in the Michelin-starred Holbeck Ghyll, before moving to Denmark to work with television celebrity chef, Mortens Kro. Then Patrick moved to Cyprus to work as executive head chef, running the fine dining restaurant in the exclusive five-star Annabelle Hotel in Paphos.
Patrick then returned to the Scottish Borders and took on the challenge of head chef in the re-opening of the extensively refurbished Jedforest Hotel, obtaining two AA rosettes within four months of the re-opening.
This is when Patrick met Vivienne who lives and was brought up in the Scottish Borders where Vivienne has worked in the local hospitality industry for a number of years, including The Bank Restaurant, The Caddy Mann Restaurant and The Jedforest Hotel .
From here, they went on to work together in several local establishments with Patrick creating dishes using the best of local products and Vivienne working front of house, ensuring the smooth running of service and that all their customers have a memorable experience.
Both joined Cringletie House Hotel & Sutherland Restaurant in September 2011 where Patrick and Vivienne set a new direction for the entire operation. It is fantastic, gratifying and very satisfying that within a year of their arrival, the AA has recognised their contribution to excellent quality at Cringletie House in Peebles.
